During Navratri, many devotees observe fasting and follow specific dietary restrictions. While traditional meals are avoided, there are plenty of creative and healthy options to enjoy. Here are three simple and fast-friendly recipes that you can prepare during Navratri.

Sabudana Khichdi

Ingredients:

  • 1 cup sabudana (tapioca pearls)
  • 1 tablespoon ghee
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon grated ginger
  • 1/2 cup boiled potatoes (cubed)
  • 1-2 green chilies (optional)
  • Salt to taste
  • Fresh coriander leaves (for garnish)

Method:

  1. Soak the sabudana in water for 4-5 hours or overnight. Drain the water completely before cooking.
  2. In a pan, heat ghee and add cumin seeds and ginger. Let it splutter.
  3. Add the boiled potatoes, and green chilies, and sauté for a few minutes.
  4. Add the soaked sabudana and mix gently. Cook for 5-7 minutes, stirring occasionally, until the sabudana turns translucent.
  5. Add salt, and garnish with fresh coriander. Serve hot.

Kuttu (Buckwheat) Flour Pancakes

Ingredients:

  • 1 cup kuttu flour (buckwheat flour)
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon black pepper
  • Salt to taste
  • Water as needed
  • Ghee or oil for cooking

Method:

  1. In a mixing bowl, combine kuttu flour, cumin powder, black pepper, and salt.
  2. Gradually add water to form a smooth, thick batter.
  3. Heat a non-stick pan and grease it lightly with ghee or oil.
  4. Pour a ladle of batter onto the pan and spread it into a small circle.
  5. Cook until the edges turn golden brown, then flip and cook the other side.
  6. Serve hot with yogurt or green chutney.

Singhara (Water Chestnut) Flour Halwa

Ingredients:

  • 1 cup singhara flour (water chestnut flour)
  • 2 tablespoons ghee
  • 2 tablespoons sugar (or to taste)
  • 1/2 cup milk
  • 1/2 teaspoon cardamom powder
  • Chopped nuts for garnish (optional)

Method:

  1. Heat ghee in a pan and add the singhara flour. Roast on low heat until it turns slightly golden and aromatic.
  2. Slowly add milk while stirring constantly to avoid lumps.
  3. Once the mixture thickens, add sugar and cardamom powder. Stir well.
  4. Cook for another 5 minutes until the halwa reaches a smooth consistency.
  5. Garnish with chopped nuts if desired and serve warm.
