Homemade Mutton Biryani Recipe: A Secret to Authentic Flavours

Mutton biryani is a flavourful and delicious meal that brings together authentic and traditional flavours. The aroma of spices and the tenderness of meat that can be enjoyed and paired well with fragrant rice. Originating from the Mughal kitchen this delicacy can be served well to the guests or family during Ramadan Iftaar or also during Eid.

Ingredients for Mutton Biryani

Marinating the Mutton:

  • 500g mutton (bone-in pieces)
  • ½ cup thick yoghurt
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon red chilli powder
  • ½ teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • ½ teaspoon garam masala
  • 1 teaspoon salt
  • 2 tablespoons lemon juice

Biryani Rice:

  • 2 cups basmati rice
  • 4 cups water
  • 1 bay leaf
  • 3-4 cloves
  • 2 green cardamoms
  • 1-inch cinnamon stick
  • 1 teaspoon salt

Biryani Masala:

  • 2 tablespoons ghee or oil
  • 2 onions, thinly sliced
  • 1 tomato, chopped
  • 1 teaspoon cumin seeds
  • 2 green chillies, slit
  • 1 teaspoon garam masala
  • ½ teaspoon saffron strands (soaked in warm milk)
  • 2 tablespoons chopped coriander leaves
  • 2 tablespoons chopped mint leaves
  • Fried onions and cashews for garnish

Steps to make:

  1. Take a bowl and mix mutton pieces with yoghurt, spices, ginger-garlic paste, lemon juice, and salt.
  2. Cover the bowl and let it marinate for 4 hours.
  3. Boil 4 cups of water in a pan and add bay leaf, cloves, cardamom, cinnamon, and salt.
  4. Add soaked basmati rice and cook until only it is 70 percent done.
  5. Drain the rice and let it rest.
  6. Heat ghee in a pan and add cumin seeds, sliced onion and cook until golden brown.
  7. Stir in chopped tomatoes, green chillies, and the remaining spices.
  8. Add the marinated mutton and cook on medium heat for 30 minutes.
  9. In a heavy-bottomed pan, spread a layer of cooked mutton.
  10. Now add parboiled rice over the mutton.
  11. Drizzle saffron milk, fried onion, mint and coriander leaves.
  12. Repeat layers until finished and top with fried onions and some ghee for flavours.
  13. Cover the pan with a tight lid and seal it with a dough to trap steam.
  14. Cook on low flame for 20 minutes to enhance the flavours.
  15. Let it rest for 5 minutes and your mutton biryani is ready.
